It's with our deepest regret that we have decided to TEMPORARILY CLOSE The Smuggler's Rest after TONIGHT DEC 22ND. In light of the latest government restrictions we have decided to close ahead of the imposed forced closure time of 3pm on December 24th. The numbers of Covid19 are rising rapidly and in particular in Louth with cases confirmed in neighboring village's over the last two days. This latest setback is devastating to our new business yet again but the health of our staff and customers remains our highest priority. The last thing we want is for any of our staff or customers Christmas to be ruined due to Covid19.
We are so sorry for any inconvenience this has caused for anyone booked with us the next two days. We would also like to thank every single person who has visited The Smuggler's Rest since we opened a little over a year ago! And to our amazing staff who have helped us bring Smuggler's to life...we cannot thank you guys enough!

General Manager

The Smugglers Rest are recruiting a General Manager with knowledge of Irish seafood and produce to join our team.

The General Manager of The Smugglers Rest will be responsible for overseeing all the Gastrobars operations. This includes the management of HR & Staff, Staff Scheduling, Facility Maintenance, Budgeting & Cost Control, Targets & Performance, assistance with Payroll, assistance with Marketing, Promotions and Advertising and dealing with the legal and regulatory issues involved in running a business. Working closely with the Head Chef with Budgets, Performance, Purchasing, Menu Planning Health & Safety and HACCP compliance. The GM will also work closely with the front of house staff and be on the premises much of the time, particularly during busy dining times or busy seasons. Must be skilled in handling fast paced working conditions, be an excellent multitasker, and be able to deal with frequent interruptions calmly and decisively.

Tasks & Duties

  • Develop operational, marketing, and business plans in conjunction with owners.
  • Estimate food and supply needs, oversee the placement of orders.
  • Hire, train, and supervise managers and staff.
  • Manage the budget, administer payroll, and make sure operations remain within budget.
  • Establish and enforce standards and regulations for personnel, administration, entertainment, and food.
  • Running of the business and looking after all areas with strong front-line leadership.
  • Stock takes and controls.
  • Health & Safety controls & ensure compliance with sanitation and safety regulations.
  • Customer service & deliver superior service and maximize customer satisfaction.
  • Coordinate daily Front of the House and Back of the House restaurant operations.
  • Working closely with the Head Chef to plan seasonal creative funky menu’s and source from local suppliers.
  • Respond efficiently and accurately to customer complaints.
  • Organize and supervise shifts.
  • Appraise staff performance and provide feedback to improve productivity.
  • Estimate future needs for goods, kitchen utensils and cleaning products.
  • Manage restaurant’s good image and suggest ways to improve it.
  • Control operational costs and identify measures to cut waste.
  • Create detailed reports on weekly, monthly and annual revenues and expenses.
  • Promote the brand in the local community through word-of-mouth and restaurant events.
  • Recommend ways to reach a broader audience.

General Manager Requirements:

  • A degree in business management an advantage.
  • Prior experience in the restaurant industry essential.
  • Excellent communication skills.
  • Knowledge of bookkeeping software.
  • Excellent customer service skills.
  • Fresh food and/or seafood knowledge.
  • Extensive wine & beer knowledge.
  • Track record of controls of your P&L and achieving budgets.
  • Excellent Interpersonal communication skills.
  • Passionate, hands on, motivational and a true leader.
  • Weekend availability essential.

We’re searching for the right team that has the enthusiasm, consistency and drive to make our new seafood gastropub a success!

Qualifications and Experience:

  • Must have chef qualification
  • Have chef experience within a fast-paced kitchen
  • Experience within a high-volume environment
  • Be able to work under pressure and on your own initiative
  • Develop menu design and bring new and exciting ideas to the table
  • Costings, planning, purchasing
  • A strong knowledge of HACCP
